Use sweet Olathe corn in summer salsa recipe

Summertime brings the best the best in sweet, fresh corn, and some of the sweetest is the variety coming from Olathe, a little town in western Colorado. It’s available at Kroger, the company that has teamed up with corn producer Olathe Sweet to promote the corn and its significant amounts of thiamin (vitamin B1), pantothenic acid (vitamin B5), folate, Vitamin C, phosphorous, manganese and dietary fiber. Grilled corn salsa

Makes 3 ½ cups

  • 2 ears fresh corn, husked, silks removed
  • ½ yellow onion peeled and cut crosswise into ½-inch-thick slices
  • ½ red bell pepper, rinsed, stemmed, seeded and halved
  • 6 ounces fresh jalapeno chilies (about 8), rinsed, stemmed, seeded and halved
  • 2 to 3 teaspoons olive oil
  • 1 firm, ripe tomato, rinsed, cored and chopped
  • 1 clove garlic, peeled and minced
  • ¼ cup chopped fresh cilantro
  • ¼ cup lime juice
  • ½ teaspoon ground cumin
  • Salt
  1. Rub corn, onion, bell pepper, and jalapenos lightly with olive oil. Place on a charcoal grill over a solid bed of hot coals or high heat on a gas grill (grill is ready if you can hold your hand at grill level only 2 to 3 seconds); close lid on gas grill. Cook, turning corn occasionally and other vegetables once, until slightly charred all over, about 5 minutes total for jalapenos, 8 to 10 minutes for other vegetables.
  2. Remove to platter when done; let cool. Cut corn kernels from cobs, chop onion and bell pepper, and mince jalapenos.
  3. Meanwhile, in a bowl, combine tomato, garlic, cilantro, lime juice and cumin. Stir in grilled vegetables and add salt to taste.
